A friend of mine made these for a church event and I just had to try them. Normally, I don't consider anything with lemon in it a dessert...it's more of a fruit you make a drink from. But these are little drops of heaven! Lemon Blossoms by Paula Deen will knock your socks off. If you've never tried them, you seriously NEED to. Just to forewarn you...they are addicting!
I made this recipe card using Krystal's Carpe Diem kit. It was a perfect fit for a "citrus-y" kind of treat! Download recipe card here.
And here's a few things I do differently than what the recipe says.
*If you have non-stick and/or coated baking pans, spraying them with cooking spray isn't really necessary.
*You can also use regular cupcake size tins but you just need to adjust the cooking time.
*Watch them carefully...12 minutes cooking time makes them a little overcooked, in my opinion.
*I don't bother with the lemon zest on mine and the flavor is still fantastic.
*After dipping all the little muffins in the glaze, I pour the remaining glaze over the top of all the muffins just 'cause I like mine well glazed. :-)
*I don't bother using the wire rack. I just put them directly on waxed paper...one less thing to wash.
